Herb, Feta & Garlic Tomatoes

This internet-famous dish is versatile, easy and so delicious.

In a baking dish, combine:

  • 1 pint baby tomatoes

  • 2 bulbs of garlic, cut in half

  • feta cheese (1 container small cubes or 1 large block)

  • 1/3 C olive oil

  • dried Italian herbs

  • sea salt & cracked black pepper

Drizzle the tomatoes, feta, and garlic with olive oil. Sprinkle herbs, sea salt, and pepper. Bake at 375 for 1 hour.

Squeeze out the roasted garlic and discard the skin. Squeeze on some fresh lemon juice and stir, pushing down on some tomatoes and garlic with the back of your spoon, until combined.

Use as a topping or base for: protein/greens / grains.
