Energy bites are extremely versatile and can be adjusted easily. They’re a great slow burning fuel for busy people on the go, and, as they’re slightly sweet, can curb a sugar craving and prevent reaching for a convenient, less nutritious treat that will have you crashing within an hour.

Ingredients:
2 cups natural almond butter (any nut butter is good! Smooth or crunchy)
1/2 Cup maple syrup
2 TBSP ground flax
1- 3 TBSP coconut flour
2 TBSP chia seeds
3/4 Cup any unsweetened crispy cereal like crispy rice or natural corn flakes
1 Cup dark chocolate chips
1 tsp vanilla extract
1/2 tsp sea salt
Steps:
With a hand mixer, beat the nut butter and maple syrup until smooth and thick.
Add the flax and coconut flour and mix for another few seconds. If your mixture is still very wet, add a bit more coconut flour. Start with less and add more if needed. Nut butter moisture levels vary.
Add chia seeds, chocolate chips, crispy rice cereal and salt. Mix until *just* combined.
Roll into small balls with your hands and place on a cookie sheet, on parchment, and put in the freezer to set (15-20 mins).
You can enjoy straight from the freezer, or, several hours later, from a Tupperware in the bottom of your bag, at room temperature.
