"Everything" Salad With Easy Dressing

A low-maintenance and delicious “everything” salad, made from whatever you’ve got in your kitchen to work with.

You can easily adapt this salad to be vegetarian or vegan. The secret is the super easy dressing. This dressing is made of olive oil, fresh lemon or lime, sea salt & pepper- That’s it! It's very quick to make and compliments many salad ingredients.

There’s no exact recipe for an "Everything" Salad - some greens, a few chopped vegetables, a protein, some nuts or seeds, and the delicious easy dressing to bring it together.


Today's "Everything" Salad:

  • One wilting head of lacinato kale from the back of my fridge, baked w olive oil for 10 mins, until soft & crisp

  • The very end of a tub of salad greens

  • One container pea shoots

  • Several olives

  • A small chunk of feta cheese, crumbled

  • A small knob of goat cheese, broken up

  • A handful of walnuts, toasted in a dry pan

  • A handful of cilantro, chopped

  • 1/3 cucumber, sliced

  • Leftover grilled chicken thighs, chopped

  • Half a lemon, squeezed

  • A generous drizzle of olive oil

  • Sea salt & pepper

I’ve used pumpkin, sesame or flax seeds, cashews or almonds, chunks of baked sweet potato, squash, shredded carrots, chickpeas, roasted broccoli or cauliflower; peppers - so many possibilities here!
