Preparing quick, affordable protein that can be scooped up and eaten with veg, corn chips, crackers, or even off a spoon, will be incredibly helpful in the thick of busy days.
1 can white beans (cannellini, navy, great northern); drained and rinsed
1/4 C tahini
2 TBSP olive oil
2 garlic cloves (or more!)
1 lemon, squeezed
1 tsp ground coriander or cumin (optional)
3/4 tsp sea salt
Fresh ground pepper
A bit of water to thin, if needed
Blitz in a food processor on high for a few mins or mash by hand (press your garlic first if you do this!).
Store in Tupperware for 4-5 days in the fridge; though its best at room temp (perfect for lunches).
