Pumpkin Seed & Goat Cheese Salad

The warm, toasted pumpkin seeds, combined with the goat cheese, olive oil, and lemon creates a creamy, citrusy dressing without the sugar, unhealthy fats and fillers of most store bought dressings.

  • A tub of arugula/spinach, baby kale, or any other deep greens

  • 1/3 Cup goat cheese, in pieces

  • 1/3 Cup pumpkin seeds, lightly toasted in a dry pan until golden

  • half a lemon, squeezed

  • 3 TBSP olive oil

  • 1/2 tsp sea salt

  • lots of fresh black pepper

Arugula is packed with the most calcium of all the salad greens, and antioxidants Vit K, C, A and manganese. Pumpkin seeds are also rich in antioxidants, fibre, good fat, protein, and give this salad a delicious crunch.
