Sheet Pan Nachos can be a balanced meal. Make them with veg, protein, healthy fat, and a side of Greek Yogurt instead of sour cream.
Any variation of:
corn chips
cheese (or vegan cheese if preferred)
protein: black beans, chicken, etc any protein of your choice (leftovers are great!)
fresh veg: I had peppers, mushrooms, spinach & avocado in my fridge
salsa
a bit of olive oil drizzled (optional)
Greek yogurt for a side
Bake on 420 for about 10 minutes.
